SPOTLIGHT ON: Vintner Grill

Michael and Sean Corrigan, owners of Agave, teamed up with executive chef Matthew Silverman to open Vintner Grill.

"Our intent is to be the best in town," Silverman said. "This restaurant is of a different caliber than the local market has ever seen. From the design to the food, everything is top notch."

Part of what sets Vintner apart is its ever-changing menu. Selections are added daily, depending on season and availability. Sometimes, the menu is decided only half an hour before Vintner opens. The day's offerings are printed out, and mini clipboards serve as menu holders.

Lunch selections can include dishes like shaved rib-eye sandwich with watercress, whole-grain mustard aioli and reggiano; porchini mushroom tortellini with baby escarole and shaved truffle-pecorino; and orecchiette pasta with braised beef bolognese, plum tomatoes and nutmeg.

Dinner items such as bistro steak medallions with basmati rice, snap peas and portobello mushroom cream; veal scaloppini with crimini mushrooms, marsala and capellini aglio olio; and crispy Florida snapper with haricot verts, fingerling potatoes and cauliflower puree have been featured.

Dessert selections are provided exclusively by chocolatier Vosges Haut-Chocolat and patrons can expect a selection of more than 100 wines to complement dishes.

Vintner Grill's patio area, with two fire pits and large canopies shielding custom-made couches and drapery, has seating for about 65 people. Items from the fresh herb garden, located on the patio, are used in the cooking.

Vintner Grill is open from 11 a.m. to 2:30 a.m. daily, serving lunch and dinner from 11 a.m. until 11 p.m. For reservations, call 214-3500 or visit www.vglasvegas.com.
